Nikki Cascone
Executive Chef and Partner
Under the diminutive toque of beautiful 5’5” celebrity chef Nikki Cascone is a true culinary maven with the fearlessness, instinct and sensibility of a keen businesswoman. A chef, sommelier and restaurateur, Nikki’s valued education and experience have been her focus throughout her career as she has sought to conquer every possible skill-set needed in the hospitality business. After many years of preparation, Nikki and husband-partner Brad Grossman began their consulting and culinary events company, Red Hook Hospitality Group. They will be producing a series of chef and food driven events across the country including the 21 city - TOP CHEF Tour.
Nikki’s passion for the culinary industry sparked at the early age of 14 when she worked at a pork store after school, slicing meats and making hand made mozzarella. Born and raised in one of the most exciting restaurant cities in the world, Nikki sought many more culinary opportunities, working in the front of house, hosting, bartending and managing. She soon sought a culinary degree, enrolling at the School of Culinary Arts in Atlanta, Georgia where she began building a stronger foundation in culinary technique.
Following graduation, Nikki worked for several years within the restaurant groups of Jean-Georges Vongerichten, Shaun Doty and Anne Quatrano – all James Beard award-winning chefs. Having gained further understanding of the many elements that complete a dining experience, Nikki turned her attention to the art of wine and food pairings and achieved certification from both The Sterling Vineyards School of Service and Hospitality and the American Sommelier Association.
Nikki’s experience culminated in working the 2005 season as the Director of Food and Beverage at Yankee Stadium overseeing all of the restaurants, clubs and private suites. The position was created for her, and already a fan of the Bronx Bombers, Nikki was able to bring her passion for food and baseball together. It was here that she learned how to really maintain quality despite the challenges of operating at high volume in a sports arena and brought the quality of stadium restaurant and suite dining to a higher level.
In 2005, Nikki opened 24 Prince in SoHo, serving traditional American fare that was hailed for offering the right balance of style, comfort and creativity at an affordable price. Three years later Nikki was a popular chef’testant on Bravo’sEmmy winning show, TOP CHEF, bringing her culinary skills to the spotlight where she became a favorite on and off of the show. In June 2010, Nikki sold 24 Prince.
Nikki can be seen around the country participating in seminars, charity events as well as classes and demonstrations, as well as becoming a green ambassador for www.thegreenbrideguide.com, The Bride and Bloom magazine. She is currently working on her own not-for-profit organization with the support of several local judges and members of the Department of Agriculture that will educate Americans on healthy economical food habits. Currently, Nikki lives with her husband in New York City and is planning to add “mother” to her growing resume as she had her first child, Jax, in January 2011.
